Coffee Cake

A fluffy caramel colored cake that has a coffee flavor which will definitely taste good with a cappuccino or hot chocolate. You can frost this cake with coffee frosting to give it an extra oomph for the coffee flavor or get chocolate and coffee flavor together and frost it with chocolate frosting.

Yield: Serves 6-8 

  Ingredients:  

  • Flour 2 cups
  • Sugar (finely ground) 1/2 cup
  • Baking powder 3 tsp
  • Eggs 2
  • Butter 125 grams
  • Instant Coffee 2 tsp
  • Water 1/2 cup

Directions:

  1. Grease and flour 9” pan and preheat oven at 180 degrees Celsius. 
  2. Mix coffee & warm water in a bowl and set aside. 
  3. Sift flour and mix baking powder in it. In a bowl beat butter for 1 minute then add sugar beat until light and fluffy. 
  4. Add eggs one at a time beating well between each addition. 
  5. Add flour mixture alternating with the coffee/water mixture, mixing well. 
  6. Put batter in the pan and place in the oven for 25 minutes or until skewer comes out clean . 
  7. Garnish with melted chocolate or coffee syrup, caramel if desired

  Ingredients:  

  • Cooking Chocolate 200 gm
  • Butter 200 gm
  • Egg 4
  • Flour 1-1/3 cup
  • Sugar 1/3 cup
  • Cocoa Powder 1/4 cup
  • Vanila Essence 1 tsp
  • Melted Chocolate for Icing

Directions:

  1. In a bowl put chocolate and butter let it melt on double boiler. 
  2. In another bowl put sugar, eggs and vanila essence mix all with spatula. 
  3. Add melted butter and chocolate in sugar mix with spatula. 
  4. Add flour in egg mixture mix well. Pour in pan and bake at 180C for 20-25 minutes. 
  5. Cut baked brownie in pieces, pour melted chocolate on browni pieces.

Swiss Roll

Swiss roll is a pretty cake roll serve with tea. Sponge cake sheet is baked and layered with jam or fresh cream then roll up and serve into pieces it can be filled with fresh fruits tiny pieces along with fresh cream.

Yield:  Serves 5 

  Ingredients: 

  • Flour: 4 oz or 8 tbsp
  • Caster sugar: 4 oz or 8 tbsp
  • Baking powder: ¾ tsp
  • Vanilla essence: ½ tsp
  • Icing sugar: for sprinkling
  • Jam: 3-4 tbsp + a drop of red color
  • For Decoration:  
  • Melted Chocolate
  • Coconut: 1 tbsp

Directions:

  1. Preheat oven at mark 5 or 200 C also grease and line with parchment paper to 10 x 15" baking sheet or pan. 
  2. Separate egg whites and yolk beat egg white with electric beater till stiff peak forms. 
  3. Add essence in yolk, add half yolk into egg white bowl then add half sugar beat for a while, add remaining yolk and sugar beat more just to mix. 
  4. Avoid to over beat. Sift flour and baking powder trice. 
  5. Now add 2 tbsp flour and fold by spatula, add flour and fold in little quantity till incorporate. 
  6. Pour the batter on baking pan tap it to make evenly, bake for 10-15 minutes. 
  7. Roll up: when done straight roll up, sprinkle icing sugar on damp cloth turn out sponge on icing sugar, sprinkle icing sugar on surface of the sponge. 
  8. Now roll it up along with cloth and put into fridge for about 5 minutes. 
  9. Take out from fridge and spread jam, now roll up only sponge. 
  10. Cut into pieces. 
  11. Ready to enjoy and If you want to decorate you can cover the roll with chocolate or cream and coconut sprinkles make slices and serve.

 Custard Cake is an excellent dessert which helps one to enjoy two in one sweet dish. Yes! It is a two in one dessert because it contains custard as well as cake. Topping of jelly makes it more appealing so do confer it with an attempt.

  • Strawberry jelly : 1 packet  
  • Banana jelly : 1 packet  
  • Dry fruits: 1 packet  
  • Cream : 1 packet  
  • Plain biscuits: 1 packet  
  • Butter: 1 packet  

For Custard: 

  • Milk : 1 packet  
  • Sugar : 1 packet  
  • Mango custard : 1 packet  
  • Cream : 1 packet 

Directions:

  1. For Jelly: In a pan boil 1½ cup water and add strawberry jelly to mix well. 
  2. Then take it out and refrigerate it. 
  3. With same procedure make the banana jelly and refrigerate it and cut in pieces. 
  4. For Custard: In a cup of cool milk add custard to mix. 
  5. Then heat remaining milk in a pan Then add sugar to dissolve. 
  6. Then add cream and slowly pour custard in the pan and cook till it turns thick and leave it to cool.
  7. Now in a chopped add biscuits with butter to chop. 
  8.  Then set a butter paper in a cake pan and grease it then make base from biscuit mixture in a pan. 
  9. Then pour the custard top with jelly pieces and dry fruits and refrigerate it. Serve chilled.

Whipped Cream is a light and fluffy cream that is used for cake decor. It has a sweeten taste.

  • Heavy cream 1 cup or 250 ml
  • Salt: 1 pinch
  • Sugar: 1/3 to 3/4 cup (according to your taste)

If you hear the story of any famous chef, when you will learn about his/her sufferings and will forget about your disappointments that you cannot become a chef and its really a difficult job. Stop crying about and just try recipes with concentrate and confidence.  

Ingredients: -  

For Sponge: -
Eggs 4 -  
Caster sugar 4 oz -  
Vanilla or pineapple essence 1 tsp -  
All purpose flour 4 oz -  
Baking powder 1 tsp -  
For Filling: -  
Fruit syrup or milk to moisten cake -  
Cream 1 cup -  
Pineapple 1 can (chopped) -  
Cherries to decorate -  
Extra Fresh cream to decorate -  
Pineapple rings to decorate ...

 Instructions:  

  1. For Sponge: Take a bowl add egg, sugar beat it and add essence, gram flour, baking powder fold it. 
  2. Now add greased pan, bake it in oven for 15 to 20 minutes on 180 degree C.  
  3. Take it out on a wire rack then make it cool. 
  4. For Filling: When the cake becomes cool then cut it and put the fruit syrup wet the sponge then put the cream and pineapple. 
  5. Garnish it with fresh cream, pineapple rings and cherry and serve.
