French Fries

Learn the secret to make crispy fries each and every time with Rahat’s recipe. Complement all your burgers with these fries or just serve with a variety of dips.

Yield: Serves 2  

Ingredients: 

  • Potatoes: 2
  • Flour: 1 1/2 tbsp
  • Salt: 1 1/2 tsp
  • Black Pepper: 1/2 tsp
  • Water: as required
  • Oil: as required

Directions:

  1. Wash, peel and cut potatoes in the shape of fries. 
  2. Boil water in saucepan and place potatoes in the boiling water for 1-1 1/2 minutes. 
  3. Strain and immediately place into cold water. 
  4. Strain after a minute. Mix flour, salt, pepper, and potatoes in a bowl. 
  5. Heat oil in saucepan and deep-fry potatoes until golden brown.

Aloo Ki Katlian

When we have nothing to cook then aloo ki katlian is the best option for us.

  Ingredients:  

  • Potatoes 250 gm (thinly sliced into small pieces)
  • Oil : ½ cup
  • Onion 1 (chopped)
  • White cumin ½ tsp
  • Fenugreek 1 bunch (chopped)
  • Tomato 1 (chopperized)
  • Salt1 tsp leveled
  • Red pepper 1 tsp (crushed)
  • Turmeric:   ¼ tsp
  • Coriander leaves 2 tbsp
  • Green chilies:  21 (chopped)

Directions:

  1. Heat oil add onion with cumin seeds and fenugreek fry for 2 minutes. 
  2. Add tomatoes, salt, crushed red pepper and turmeric fry well. 
  3. Add potatoes with 1 cup water, cover and cook till done. 
  4. Lastly add coriander and green chilies. 
  5. Serve with paratha.

Cook time: 25-30 Minutes
Nutrition facts: 33 calories, 100 grams fat




Ladyfinger is prepared with pickled spices and yogurt. Make for lunch and serve with chapati and salad.  

Ingredients: -  

  1. Lady fingers ½ kg -
  2. Mustard oil 1 cup -  
  3. Fenugreek seeds few -  
  4. Turmeric powder 1 tsp -  
  5. Nigella seed 1 tsp -  
  6. Mustard seed 1 tsp -  
  7. Whole coriander ½ tbsp -  
  8. White cumin 1 tsp -  
  9. Red chili 1 tbsp (crushed) -  
  10. Green chilies 6 -  
  11. Aniseed 1 tsp -  
  12. Tamarind paste ½ cup -  
  13. Curry leaves few -  
  14. Yogurt 1 cup -  
  15. Salt to taste ...

 Instructions:  

1. First wash lady fingers and dry them and place mark in the center. 
2. Heat mustard oil in the wok and add few seeds of fenugreek and add lady fingers to slightly fry.  
3. When they turn brown add turmeric powder, nigella seed, mustard seeds, whole coriander, white cumin, red chili, green chilies, aniseed and tamarind paste to cook.  
4. Then add few curry leaves with yogurt and simmer for 5 to 10 minutes.  
5. In the end add salt and serve it with chapattis.
