Katakat

Pakistani people like to eat Kaleji Katakat. it is made on tawa. It is not so much spicy that's why anyone can eat it. On eid-ul-azha most of the people ate Kaleji in Breakfast. You should try this new taste of kaleji. it will be new for your family.

  Ingredients: 


  • Mutton heart 2 
  • Mutton kidneys 4 
  • Mutton brain 2
  • Garam masala 5 gm
  • Green chilly 8
  • Fenugreek leaves 2 gm 
  • Coriander 50 gm 
  • Butter 100 gm 
  • Salt to taste
  • Red chilly powder 5 gm
  • Oil 2 tbsp 
  • Ginger/garlic paste 20 gm
  • Tomatoes 50 gm 
  • yogurt 100 gm


Directions:

1. Wash and clean all the organ meat thoroughly and boil them and cover with lid.
2. When organ meat tenderizes make mince of the organ meat and add oil, ginger and garlic.
3. Mix well and cook for 5 minutes, keep stirring.
4. Add the remaining ingredients and cook for 5 minutes.
5. When oil separates serve hot, garnished with coriander.

  • Bread 3 slices
  • Milk 1 cup
  • Egg 1
  • Worcestershire sauce 2 tbsp

4. Pre-heat the oven at 350 degree C and bake meat loaf in oven for 1 hour and 15 minutes or until the loaf is cooked properly.

  Ingredients: 


  • 1 kg mince 
  • 1 cup Corn meal 
  • 1 bunch Mint leaves  
  • 1 Onion chopped
  • 3 Eggs
  • 4 Green chilies 
  • 4 Tomato 
  • 1 tsp Cumin seeds  
  • 1 tsp Whole black pepper
  • 1 tbsp Crushed red pepper
  • 2 tbsp Pomegranate seeds 
  • 2 tbsp Whole coriander 
  • Salt to taste 


Directions:


  1. Chop 1 kg mince well
  2. Beat 3 eggs well and fry like omelet. Keep aside.
  3. Grind together 2 tbsp whole coriander, 1 tsp black pepper and 1 tsp cumin seeds.In a bowl put together chicken mince, 2 tbsp pomegranate seeds, salt to taste, fried eggs, ground mixture of black pepper, 4 chopped tomatoes, 4 chopped green chilies, 1 chopped onion, 1 bunch of chopped mint leaves, 1 tbsp crushed red pepper and 1 cup corn meal. 
  4. Mix well and keep aside for few minutes.
  5. Make Pattie and fry in a frying pan with ghee or oil as required. 
  6. Serve with Roghani Naan or parathas.

Lucknowi Keema

Try making out keema in Lucknow style. You can enjoy the flavor of ginger garlic paste, red chili powder, salt, turmeric, raw papaya, mint and yogurt with mince by following this recipe.

  Ingredients:  

  • Beef mince: ½ kg:  
  • Onion: ½ kg:  
  • Yogurt: 250 gm:  
  • Green cardamom: 2
  • Green chili: 4:  
  • Mint leaves: ½ bunch:  
  • Oil: ½ cup
  • Cumin seeds: 1 tbsp
  • Coconut: 1 tbsp (desiccated):  
  • Ginger garlic paste: 2 tsp:  
  • Beef mince: ½ kg:  
  • Raw papaya: 2 tsp:  
  • Red chili powder: 2 tsp:  
  • All spice powder: 2 tsp:  
  • Turmeric powder: ½ tsp:
  • Salt: ½ tsp:  

Directions:

  1. Mix together mince, ginger garlic paste, red chili powder, salt, turmeric, raw papaya and yogurt. 
  2. Mix well and leave it for 30 minutes. 
  3. Heat oil in pan, add chopped onion and fry well. 
  4. Add marinated mince, cover and cook for 10 minutes. 
  5. Now turn the flame high and fry well. 
  6. Toast cumin seeds, desiccated coconut and small green cardamoms. 
  7. Add to the mixture. 
  8. Lastly add green chilies, mint leaves. 
  9. Put a burning coal in pan, drop some oil, and cover for few minutes. 
  10. Now take out in serving dish, sprinkle all spice powder and serve.

Gulabi Mutton

Gulabi Mutton is very scrumptious Eid recipe. You can serve it with chapati or naan in lunch or dinner with side dishes.

Ingredients:  

  • Mutton ½ kg
  • Oil 4 – 5 tbsp
  • Onion 1 medium
  • Ginger garlic paste 2 tbsp
  • Cloves 4 – 5
  • Green cardamom 5 – 6
  • Tomato paste 4 tbsp
  • Yogurt 125 gm
  • All spice powder :  
  • Chili powder 1 tbsp
  • Salt:   to taste
  • Water 1 cup
  • Almond 25 gm (chopped)
  • Coriander leaves ¼ bunch (chopped)
  • Ginger1 piece

Directions:

  1. Heat 4 – 5 tbsp oil in a wok, add in onion and salt till golden brown. 
  2. Then add ginger garlic paste and mutton. 
  3. Fry well till its color is changed and water dries. 
  4. Add cloves, green cardamoms, tomato paste and yogurt. 
  5. Mix well and cook for 1 – 2 minutes. 
  6. Then add all spice powder, chili powder, salt and water as required. 
  7. Cover and cook for 25 – 30 minutes till meat is tender. 
  8. Lastly add almond and coriander leaves. 
  9. Dish it out garnish with ginger and serve hot.

Cook time: 20-30 Minutes

Bihari keema is a variation of bihari kababs or boti. It goes well with khameeri paratha. ou can enjoy your Bbq party or any occasion of feast.  

Ingredients: -  

  1. Mince ½ kg (double machined) -
  2. Yogurt 1 cup -  
  3. Poppy seeds 1 tbsp (heaped) -  
  4. Coconut 1 tbsp heaped (desiccated) -  
  5. Button red chilies 12 -  
  6. Cloves 3 -  
  7. Cinnamon sticks 2 -  
  8. Green cardamom 3 -  
  9. Raw papaya 1 tbsp heaped (grinded) -  
  10. Ginger garlic paste 1 tbsp (heaped) -  
  11. Clarified butter/oil ½ cup -  
  12. Salt 1 tsp -  
  13. Brown onion 3 tsp (grinded) -  
  14. Allspice 1 tsp -  
  15. Fresh coriander for garnish -  
  16. Green chilies for garnish ...

 Instructions:  

1. Roast and grind together poppy seeds, desiccated coconut, button red chilies, cloves, cinnamon and green cardamom. 
2. Marinate mince with raw papaya and ginger garlic paste and keep for 2 hours.  
3. Heat clarified butter add roasted and grinded masala with ¼ cup water, salt and fry for few minutes. 
4. Add marinated mince, mix well and add yogurt. 
5. Cover and cook on slow flame till water dries. 
6. Then add brown onion and all spice and give simmer of coal.  
7. Garnish with coriander and green chilies and serve.Serve hot with Khameeri paratha.
